Pineapple Cilantro Chicken


Boneless chicken tenderloins (cut into cubes)

2-4 whole Eggs (can use egg whites only)

1 cup unsweetened nut milk

Salt, pepper, garlic or house seasoning

1 cup of Flour of your choice (oat flour, rice flour, pork grinds, almond flour etc)

Dipping sauce - Sweet Papi


For Egg wash (crack eggs in a medium size bowl). Add nut milk. Whisk the two together. In a separate dish, add your flour and seasoning to the same bowl. Mix up in order to incorporate the seasoning and salt into flour.

Take your cubes of chicken tenderloin, add to the egg wash. Once chicken is submerged in the egg wash, remove and let the excess egg wash drip off and then add to the flour and shake or mix.

Make sure flour mixture fully covers the chicken. Keep the portions of chicken small to not encumber the flour. Once all of your chicken is drenched in flour. Add chicken to air fryer at 400 for 15-18 minutes. Before turning on the air fryer, spray the top of chicken nuggets with non stick spray.

Let cook for 5 minutes, remove the air fryer tray, shake around the chicken, re spray and cook for another 5 minutes and repeat the process until the chicken is fully cooked and crispy.

Immediately toss the crispy chicken nuggets in 1-2 tablespoons of Flavor Don (optional) use 2-3 servings of Sweet Papi to dip the crispy golden nuggets of flavor.
